Tuan Phan was born in Saigon Vietnam, now known as Ho Chi Minh City but his culinary career did not begin until he moved to United State in 1992. Growing up in a traditional Vietnamese family, Tuan always shadowed his mother and grandmother in the kitchen. With his love and respect for quality and traditional Vietnamese food, Tuan decided to pursue his career in culinary industry.
When Le Colonial opened in San Francisco in 1998, Tuan was hired as a line cook, working the wok station. Because of his dedication, hard work and love, he was promoted to Sous Chef within two years of his hiring. After working closely with several named chefs for almost two decades, Tuan mastered his skills in fusion cooking and with his skills for working with and managing staff, he was promoted to Chef de Cuisine in early 2018. While his knowledge of French Vietnamese food cuisine has grown, Tuan still humbly still asks his ninety-year old mother for recipes and suggestions.

It will only get better. Chefs are always looking to go beyond the norm and being creative.
