Night Market At The Cosmopolitan of Las Vegas

There’s a food festival playbook of sorts. Organizers invite chefs from around the country to host dinners, or serve plates at a walk-around tasting. Booze flows a little at the beginning, and much more at the end and everybody goes home happy and satisfied.

And then... there’s a food festival in Vegas where that playbook gets ripped up, thrown away and long forgotten. People sometimes don’t make it home at all.

“I'm playin' two games at once at the craps table, hola mami,” says New York City bao badass Eddie Huang, who is serving a char siu bao at the LUCKYRICE Night Market on June 23 at The Cosmopolitan  of Las Vegas.  Tickets are, shockingly, still available. This will not last.

Eddie joins a cast of 20 chefs, five of whom - Gerald Chin (Wicked Spoon), Shirley Chung (China Poblano), Stephen Hopcraft (STK), Anthony Meidenbauer (Holsteins) and David Myers (Comme Ça) -  help make The Cosmopolitan's Restaurant Collection a stand-out on The Strip.

Ten of the chefs are flying in from around the country for the epic tasting to be held outdoors on the 36,000 square foot Boulevard Pool Deck. The long list of participants includes Jordan Kahn, Susur Lee, Charles Phan, Paul Qui, Angelo Sosa, Dale Talde and Sang Yoon. It’s a stacked deck, to use a Vegas term.

And when the chefs aren’t gambling (I love big payouts,” says roulette fan Dale Talde), they will likely be hitting the city’s stellar restaurant scene. If you thought Vegas was only about buffets and hamburger chains, you’re clearly not doing your homework.

After checking in, Huang likes to hang with chef Akira Back at Yellowtail, as well as hitting up the Vegas branch of New York’s legendary Italian spot Rao's. Dale Talde goes for the small bites at Tao Beach and then hits up Thai stalwart Lotus of Siam.

“It’s a must when I’m looking to sit down and have a fantastic meal without all the usual Vegas craziness and pretense,” he says of Lotus admitting that when it comes down to something quick and good he hits up Fatburger.

At the Night Market, Talde, a past Top Chef contender and owner of his eponymous restaurant in Brooklyn, is serving a one-bite perilla leaf salad. “It’s bacon and tamarind caramel, chili, dried shrimp and lime served on a perilla leaf  that you just roll up and pop in your mouth. It’s a dish that looks really simple, but it’s loaded and layered with flavors.”

“I love eating at both the Joël Robuchon restaurants, but am especially fond of L'Atelier because I love counter dining, where chef Steve Benjamin just keeps bringing me rich scrumptious treats in small bites,” says Pichet Ong of his must-visit spot in Vegas.

Ong, a world-acclaimed pastry chef whose dishes blur the line between sweet and savory, is serving an olive oil torrejas with strawberries and maldon salt. As for playing the tables? “I’m a control freak with a mathematically inclined mind, so I like craps. Throwing the dice with style is the best part.”

David Myers knows Vegas well. “It’s a dynamic food city, bottom line,” he says. The Los Angeles chef and restaurateur opened a second location of his restaurant Comme Ça in The Cosmopolitan and has been beyond satisfied with the results.

“I feel very fortunate to have a partner like The Cosmopolitan,” he says. “They were dedicated to a strong food and beverage vision from the beginning and the entire project is unlike anything the city has ever seen before.”
